01 THE IDEA

Same broth. Just a different way to enjoy it.

When we think of សម្លប្រហើរ, we often think of it served with Nom Banh Chok noodles. But the broth itself can be enjoyed as a soup too.

For this version, we use the same Broher Nom Banh Chok Paste, but skip the noodles and serve it with rice instead. We add more vegetables and toppings while keeping the fish, herbs and familiar Khmer flavors that make the broth so comforting.

What we use

Broher Nom Banh Chok Paste

The easy starting point for the broth. Instead of building the whole seasoning base from scratch, we combine the paste with cooked fish, crush them together in a mortar, then add the mixture into the broth.

02 · The method

Build the broth, then make it your bowl.

Three simple steps: build the fragrant fish broth, prepare the fish and paste mixture, then bring the vegetables and soup together.

01
Start with the aromatics.

Wash the fish, vegetables and herbs. Bring a pot of water to a boil, then add the galangal, lemongrass and kaffir lime leaves. Let the aromatics simmer until the water becomes fragrant.

Add the cleaned fish and cook until done. Carefully remove the fish, take out all the bones, and break the meat into small pieces.

02
Prepare the vegetables and fish mixture.

Keep the same pot of fish broth. Add the bite-size taro and pumpkin and let them cook in the broth. Add the mushrooms and chicken seasoning powder as the vegetables cook.

While the veggies are cooking, combine the small pieces of cooked fish with the Broher Nom Banh Chok Paste in a mortar and crush them together until well combined.

03
Bring everything together.
