Fry Garlic & Prepare Sauce Base

In a pan over medium heat, fry minced garlic in oil until crispy, then scoop it out for garnish. In the remaining garlic oil, stir in palm sugar, oyster sauce, water, chopped spring onions, and 1 tbsp Hloung Chicken Powder until dissolved.

Stir-Fry the Clams

Toss in the cleaned clams and optional chopped chili, stir-frying for a few minutes until the shells open and absorb the sauce. Transfer the cooked clams and rich juices to a serving plate, top with the reserved crispy golden garlic, and serve hot with steamed rice.

  • Don't overcook: Clams cook very quickly. As soon as the shells pop open wide, they are ready. Overcooking makes the meat rubbery.
