Firm White Fish Fillet / Bite-size - 0.5 kg
- Hloung Amok Paste - 1 Packet
- Hloung Chicken Seasoning - 1 tbsp
- Palm Sugar Paste - 1 tbsp
- Thick Coconut Milk - 200–300 ml
- Large Egg - 1 pc
- Noni Leaves (ស្លឹកញ) - 4–5 leaves
- Kaffir Lime Leaves (ស្លឹកក្រូចសើច) - 2-3 leaves
- Red Chili (ម្ទេសក្រហម) - 1-2 pcs

- Small steaming bowls (or folded banana leaves - ចានចំហុយ ឬ ស្លឹកចេក)

Cooking Instruction (Written & Video)
1. Prep the Veggies and Steaming Bowls
Bring a small pot of water to a boil and briefly submerge the noni leaves for 10–15 seconds until pliable.
Drain immediately, pat dry, and lay them flat at the bottom of your steaming bowls.
2. Whisk the Amok Base
In a mixing bowl, whisk the whole pack of Hloung Amok Paste and an egg together until smooth. Stir in 1 tablespoon of Hloung Chicken Seasoning and 1 tablespoon of palm sugar.
Slowly pour in the thick coconut milk while whisking continuously until a uniform, light-amber emulsion forms. Gently add in the bite-sized fish fillets and mix until fully coated.

3. Assemble and First Steam
Divide the fish and curry mixture evenly into your prepared bowls over the noni leaves. Transfer to a preheated steamer basket over boiling water, cover tightly, and steam over medium-high heat for 20 minutes until the custard sets.

4. Garnish and Final Steam
After 20 minutes, uncover the steamer and gently drizzle 1–2 tablespoons of fresh coconut milk over each portion. Top with finely julienned kaffir lime leaves and sliced red chilies. Cover and steam for an additional 5 minutes to set the garnish and release its aromatic oils.
